Shrikhand Delight!
For all thoses Shrikhand lovers out there....here is a very simple recipe to enjoy a refreshing Shrikhand
This quantity can be enjoyed by 2-3 people
Please fetch:
2 cups of curd
3-4th cup sugar (powdered if possible....not necessary)
1/2 teaspoon cardamom powder (i.e 1/2 chhota chamachh elaichi powder)
A pinch of saffron (Kesar)
Please do:
1.Churn the curd with a spoon and tie it in a muslin cloth (any thin cloth will do).
Now hang the cloth (potli) for 3-4 hours. This will drain all the extra water and make the curd smooth.
2.Soak the saffron in 2-3 teaspoons of water for 15-20 minutes.
3.Remove the curd from the cloth. Add sugar to it and mix them well.
4.Seive this mixture through a thick sieve to smoothen it out.
If the quantity of Shrikhand is more you can even use a mixer for smoothening.
5.Now add to it the cardamom powder and the soaked saffron. Mix well.
6.Refrigerate the Shrikhand to make it cool. The Shrikhand is now ready to serve.
Note:You can garnish with small pieces of pistachio(pista) to add flavour.
Another option is adding 'charodi' (I don't know what is it called in English...Plz ask your moms)
I am sure you all would try it out yourself at home and let me know how you liked it.
